Opening hours
Preorders should stop at 10:00 AM when the dough is shaped. Class registration should open the evening before, not at midnight. Without hours, the form takes names at 2:00 AM and you clean up in the morning.

How it works
In Settings under Hours, pick the days you take names and the open and close times. Tuesday to Saturday, 6:00 AM to noon, for example. Everything is in the waitlist's time zone.
Set a close time at or before the open time and the window runs into the next day. Open 6:00 PM, close 5:00 PM means registration for Tuesday's class opens Monday evening and closes Tuesday afternoon.
For a drop or a presale, set an opens-at and a closes-at date and time instead of a weekly pattern. The one-off window is checked first.
Outside the hours, the form is replaced by your closed title and message plus the next opening time in their own time zone. The API answers 423 waitlist_closed with reopensAt.

Yes, and you usually should. Set the reset time to the opening time so one registration window is one capacity window. The gym-classes recipe does exactly that.
Leave them out of the days. Visitors on those days see the closed screen and the next opening time.
Yes. Pause from the overview or the header button and the form shows your paused message until you reopen it. The schedule takes over again when you do.
